These peanut butter and coconut bliss balls are a very simple, everyday treat. Gluten free and free of refined sugar, they are suitable for many diets. A handful of ingredients, a bowl and a food processor is all you need. I usually love bliss or protein balls, but hardly share the recipes for them. In fact the only other one I shared is the one for my date protein balls! (Which by the way are still a favourite of mine).
Because there is no cooking involved and not many ingredients, I would suggest using the best ones you can find. When it comes to bliss balls, quality ingredients are key.
The Peanut Butter:
Ideally you want to use a smooth one, it is easier to mix in with the ingredients and does not add extra texture. I like using the Meridian Organic ones. You can get them in most supermarkets and don’t cost too much.
Shredded coconut is something I have been using a lot lately and I have learnt that not all taste the same. This is why I recommend getting a good quality organic one like the one Organic Desiccated Coconut from Forest Whole Foods. This was gifted to me a while back, however you can order it online via their website.
For this step you want to opt for flours that don’t need to be cooked. Like almond or oat flour. I used Oat flour as I like the extra texture it gives. I have made these using the Organic Wholegrain Flour from BuyWholeFoods, however you can just blend rolled oats in a nutriblender. This is an extra step but, it will make tings easier if you can’t find oat flour in your local stores and don’t want to wait for shipping.
This is totally optional. I like to add a little extra sweetness with the Rowse clear squeezy honey.
Peanut Butter and Coconut Bliss Balls
- 1 cup Peanut Butter
- 1/2 cup Oat Flour
- 1 tbsp Honey
- 1 cup Shredded Coconut
- Mix all the ingredients, except for the coconut, in a bowl
- Form 10 balls using your hands. This works better and is less messy if your palms are slightly wet
- Roll each ball in the shredded coconut and enjoy!
