Blueberry Compote is such an easy and delicious topping for so many breakfasts and desserts. I personally love it on crepes and mixed with Greek yogurt.
It’s very simple and with just four ingredients, it takes about 15 minutes to make. Perfect. It is quite similar to my blueberry sorbet, but because this has no honey in it, the flavour is completely different.
I use frozen blueberries, this is just because I always have them in the fridge and they are available all year round. However if you have fresh berries you can use those. You don’t even have to use blueberries, any type of berry will do.
The next ingredient is lemons. Unwaxed lemons are best for this recipe, as you will need the zest. I buy mine from Morrisons but I believe you can get them at the farmer’s market too. If you can only find waxed lemons, make sure to scrub them well before zesting.
The next ingredient is icing sugar. Granulated sugar can also be used, but i just prefer the way icing sugar melts. If you prefer brown sugar you can also use that, but the taste might be slightly different.
Lastly you will need some water. The water is just to thin the compote down slightly. It doesn’t affect the flavour.
This blueberry compote will keep in the fridge for 5-6 days as long as it is in an airtight container or jar. I really like taking a jar to work and leaving it in the fridge, that way I can mix it in with my yogurt in the morning. - 250 g Frozen Blueberries
- 1 Unwaxed Lemon
- 2 tbsp Icing Sugar
- 1 tbsp Water
- Pour the blueberries and sugar in a pot and zest a lemon. Mix it all together
- Cook on medium heat for about 10 minutes until the berries start to wilt and releases the juices
- Using a spoon remove some blueberries from the pot, add the water and keep cooking for another 5 minutes
- Turn the heat off and stir back in the blueberries you took out in the previous step
- Let it cool before serving.
