Chocolate Chip Mint Ice cream - No Churn

Delicious, creamy and refreshing. This ice cream recipe requires no churning machine and never disappoints.

Equipment

  • Hand Mixer
  • loaf tin

Ingredients

  • 240 ml Cold Double Cream Cold
  • 200 ml Condensed Milk
  • 1 tsp Peppermint Extract
  • 1 or 2 tsp Green Food Colouring Adjust to your preference
  • 150 g Dark Chocolate

Instructions

  • Finely chop the dark chocolate and set aside
  • In a large bowl beat the cream until stiff peaks form
  • Add the condensed milk, colouring and peppermint extract and gently fold everything in until you have a smooth cream
  • Fold in the chopped chocolate
  • Pour in a loaf tin, cover with some cling film and freeze for 4-5 hours, mixing it with a spoon every hour for the first 2 hours
