Iced Vanilla Matcha - Dairy Free

If you are a fan of Starbucks Matcha Frappucino, then get ready to fall in love with this. It is very similar in taste, although not in texture as it isn’t blended with ice.

This iced drink is the perfect afternoon pick me up. It is sweet and delicious and knowing how good matcha is for me, makes it even more appealing. This beautiful green tea powder is high in antioxidants and some studies have even found that it boosts brain function.

The first step of making this drink is brewing the perfect matcha. There are many brands out there, but I prefer to use Pure Chimp. When making matcha, it’s best not to use boiling water. What I like to do is boil the kettle and then let the water cool for 2 minutes, before using it. I like to mix my matcha with a  milk frother to make sure all the powder has dissolved. Alternatively, you can use a whisk.

Adding vanilla extract makes this drink sweet and gives it a distinct flavor. Vanilla and matcha are a perfect combination. You can use vanilla syrup instead of the extract if you have any.

For the milk, I like using coconut milk. One thing to keep in mind is that, unless you are using a barista range, most plant-based milks do not forth up and foam like full-fat cow’s milk. I find that coconut milk works best as it does thicken up a little. It also add another layer of flavor. Almond milk works particularly well in this drink too.

Equipment

Ingredients

  • 1 tsp Matcha Powder
  • 60 ml Hot Water NOT BOILING
  • 1/2 tsp Vanilla Extract
  • 330 ml Plant-Based Milk (I use coconut)
  • Ice

Instructions

  • Start by mixing the matcha with the hot water and half of the vanilla. Use a milk frother or whisk to make sure the powder dissolves completely. Set it aside.
  • Pour 30ml of the milk into a separate cup and mix in the rest of the vanilla. Froth it up until it doubles in volume. Please bear in mind that most plant milks do not froth up much.
  • Pour your ice into a serving glass and pour the rest of the milk over it
  • Pour in the matcha and top it with the vanilla milk
  • Stir and enjoy!
