This slow cooker pulled BBQ chicken is one of my husband’s favourite dishes. It is the epitome of homemade junk food and the star of a dirty burger. I don’t use my slow cooker nearly enough to be honest and when I do I always end up so impressed! It’s so little effort for so much flavour! This chicken is so moist and juicy and the surprisingly simple sauce is full of flavour and oh so satisfying. Every time I make it, everyone has seconds!
The grated onion ensures the sauce is smooth and I find that grating the onion can actually give more flavour than juts slicing it. I also grate the garlic for the same reason.
The added sugar does make this a sweet sauce, but once you add the Worcestershire sauce, it all balances out. You can use plain BBQ sauce, however we love mixing the normal one with the Red devil Wings BBQ sauce. It gives it the perfect kick and extra flavour we need.
This pulled chicken is perfect in a brioche bun with some cheese and chunky coleslaw, alongside some chips of course. If burgers are not your thing, then don’t worry. This chicken is also a great filling for a wrap or a toping for a good old jacket potato. Perfect for a night in with friends.
This recipe is enough for about 4 people and the slow cooker I use is a small 2.5L Morphy Richard’s one. Perfect for our small family.
Slow Cooker Pulled BBQ Chicken
- 3 chicken breasts
- 1 cup Normal BBQ sauce
- 1 Red Onion Grated
- 2 Garlic Cloves Grated
- 2 tbsp Olive Oil
- Add all the ingredients, except for the chicken, to the slow cooker and mix well
- Add the chicken as it is and make sure it’s covered by the sauce
- Cook on high for 3 hours
- Once the chicken I cooked (inner temperature should be 75degrees Celsius) shred it using two forks and let it cook for a further 5 minutes
- Serve it with your chosen sides
