Pesto Topped Basa Fillets

Today I am sharing yet another easy pleasure recipe. In fact this might be the easiest thing I’ve ever made. It uses ingredients which I always have in my kitchen and when I make it I can have dinner on the table in 30 minutes.

What you pair it with is completely up to you, but I usually whip up some wilted spinach and broccoli to lay it on and have it with sweet potato fries.

Ingredients for 2 portions:

  • 2 Frozen Boneless Basa Fillets
  • A jar of Pesto
  • 1 Red Chilli
  • Chilli infused Olive Oil (you can use normal oil too, I just like extra spice)
  • 3 Baby Plum Tomatoes

Preheat your over to 200C.

Brush your frozen filets with oil, slather the top side with a generous amount of pesto. Depending on the size of your fillet this can be anything from 2 to 4 tablespoons. Make sure it’s a nice thick layer.

Top it with slices of chilli and tomato.

Bake for 25 minutes.

And that’s it. Enjoy it while hot.
