Working 9-6 Monday to Friday I find it really hard to cook elaborate dinners during the week, so I usually end up making something quick. Due to the fact that I detest bland food, when I say quick dinner I do not by any means mean bland. Just because something is quick does not mean it has to be bland or unhealthy.
- Fresh Spinach
- Finely Diced Onions
- Firm Tomato
- Olive Oil
- Salt and Pepper to taste
- Chilli flakes
- Close cup button mushrooms (finely chopped)
- Grated Cheese of your choice ( I like Mozzarella)
- Seeded tortilla wrap.
Now start by preheating your oven at 180C.
In a skillet drizzle some olive oil, and once it is heated add in your onions, crushed garlic and mushroom. Stir fry the mushroom and once it is almost cooked add in your prawns. Next season with your herbs and spices, salt and pepper and coriander and cook until the prawns are completely pink (about 3-4 minutes).
Lay out your tortilla and spread a few drops on olive oil on one half, you can use butter but I just prefer olive oil.
On the same half spread a good amount of spinach leaves and layer them with the sliced tomatoes. Next add in your prawns and mushrooms using a fork or a pair of kitchen thongs so as to avoid adding the oil in. Finally add a good amount of cheese, fold over the other half of the tortilla and press gently.
Bake for about 15 minutes or until the cheese has melted and the bread has crisped up a bit.
The filling can vary according to personal preference, I have personally made this with raw prawns but have used ready cooked ones in the past to save time.
