Another quick dinner idea I love making and of course eating 🙂
- 1cup couscous
- 1/4 cup chopped spinach
- 1/2 red pepper diced in small pieces
- Half a handful of finely diced red onion
- Olive oil
- Salt and pepper
- Cayenne pepper
- 2 eggs
- 2 tablespoons of flour
Start by heating up a tablespoon of Olive oil, then add your peppers and onions.
Let it fry for a minute or so then turn the hob off and pour in your couscous, add boiling water, season with salt and pepper give it a stir and cover.
Once cooked let it cool for about 10 minutes.
Pour the cooled couscous in a bowl, add your spinach, egg, flour, breadcrumbs, cayenne pepper, oregano and parsley.
Mix well with your hand until it’s all blended in. Add more breadcrumbs and flour until the paste is firm.
In a small pan heat up one tablespoon of olive oil, take a handful of the couscous mixture and roll it into a ball.
Carefully place it on to the hot oil and gently pat it down. Let it fry for a few minutes and then flip it and let the other side fry.
Leave it onto an absorbent kitchen paper towel to drain the excess oil.
