2 potatoes and 1 sweet potato all cut into chunks
1 crushed clove of garlic
30g of unsalted butter
1/2 teaspoon of paprika
1/2 teaspoon of dried oregano
1/2 teaspoon of dried basil
1 and 1/2 juicy lemons
2 tablespoons of honey
Squeeze 1 lemon in a small pan over a medium heat, add the butter, the herbs, the paprika, chilli flakes, salt, garlic, pepper, honey and rosemary. Stir until the butter is completely melted and everything is combined.
Lay out the potatoes and chicken on a roast dish and pour the butter over it covering everything. Cut the other half lemon into wedges and tuck it amongst the drumsticks like in the picture below, isn’t it pretty?
Roast for about 50 minutes until the potatoes are golden and crisp.
Serve with salad or rice or veg or whatever you fancy!
