A Healthy Breakfast: Avocado Egg Cup

A healthy breakfast is one of the most important parts of anyone’s day, and as we all know when you are working it’s very hard to have time for such a breakfast everyday. But there is something that is easy, fast, healthy and extremely tasty: Avocado Egg Cup. I love these, they are easy to make and ideal for busy people, you can just shove it in the oven and go about your business without having to stir, sift and turn. You can also make them as part of brunch, they’re so simple and yet look so good.Image

You will need:

1 medium mature avocado

1 medium egg

Sea salt or algae salt

Seasoning herbs of choice

Toppings of choice, the ones in my picture are goat cheese and spring onions but you can choose whatever you like.

What to do:

Preheat the oven at 220 degrees (Celsius)/ 425F

Very carefully cut your avocado in half (it’s harder than it sounds)

Take the pit out and take scoop out some of the pulp to make more room for your egg

Crack your egg so that the yolk is in the avocado’s hole

Sprinkle some sea salt or algae salt and your herbs of choice

Put it in the oven and leave it until the egg is cooked, for me this was around 20 minutes but next time I will take it out a few minutes before as I almost burnt mine (you can see this in the picture)

Take it out and put on your toppings while it is still hot.
